About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

Butter Crunch Lemon Bars : page 299

These were surprisingly good. Who would of thought to lighten up lemon bars by using low fat cottage cheese processed until smooth in the food processor. Nice lemony flavor too.

Egg and Cheese on a Roll : page 47

To make these even healthier I used whole grain English Muffins instead of the regular ones called for. I'm not usually a ketchup and egg type person but it worked on these with the addition of hot sauce.

Garlic Parsley Steak "Fries" : page 242

While these were very good you really couldn't taste the garlic and 3 tablespoons of olive oil was hard to get to coat 3 pounds of potato wedges. They did get nicely browned in the oven and quiet tasty.

Grinder : page 63

I really enjoyed these, although I though one hot dog bun for two people was a skimpy serving size. I ate a whole one. The filling on the other side was supposed to serve 4 and I had enough to fill eight hot dog buns instead of two. Son ate two the first with mozzarella as described in recipe and the second he requested mustard, cheddar and hot sauce.

Peach and Blueberry Pancakes : page 27

While this is a breakfast dish I decided to make them for our supper. They were a hit and even hubby enjoyed them despite the fact he normally doesn't care for cooked blueberries.

Reuben Sandwich : page 57

Hubby, son and I all agreed these were very good. We enjoyed the sauce that was on them and it was easy to make with ingredients I already had on hand. I couldn't find the lower sodium corned beef but the one I bought wasn't as bad as some I've seen. I was able to get the low fat Swiss though. I'll probably be making these again since they were such a hit with my guys.

Savory Egg Muffins : page 49

These weren't as good as I was expecting but they were ok. Interesting that the crust is made from Reduced sodium Stuffing Mix for chicken. I did opt to make them even lighter by using egg beaters instead of whole eggs.

Shrimp Burger : page 74

I made this one for Harold, Sarita and I on our OBX 2015 vacation. All three of us devoured ours. So good. Dexter and Andrew don't care much for shrimp so they had beef burgers.
