About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Grilled Cheese with Havariti & Apple : page 116

This book is divided into seasons and from this recipe is in the fall section which is the season we just started here now. Daughter and I really enjoyed this one. Who would have thought to put Havarti, apple, argula and Dijon on Italian bread and grilling it? Delicious!

Grilled Chicken Tenders "Buffalo Style" : page 77

Son and I really enjoyed this recipe. He ate his without the celery salad though with just a sprinkle of the blue cheese on the tenders. I on the other hand loved the simple celery salad. I even made me another celery salad for my lunch the next day with a couple of the leftover tenders chopped up in it. The tenders were just as good cold as hot. I used my grill pan to make these.

Mushroom Philly Cheesesteaks : page 162

Made these for hubby, son and my supper. Enjoyed the addition of shiitake mushrooms on this one. I had to leave the onions off son's though. Easy, fast, delicious supper. Even though this was in the winter section they would be great any time of year.

Spicy Beef Tacos with Fresh Salsa : page 192

While this was from the winter section I think tacos are great any time of year. These are really spicy from the 2 teaspoons of Chipotle powder and 1 teaspoon of cayenne. They were delicious though.

No cheese was called for and son and hubby think you can't have a taco without cheese so they added cheddar and sour cream on theirs. I ate one with cheese and one without and thought they were good either way. I did add the suggested cilantro to mine but the guys hate cilantro so they omitted that.
