Chopped Brocoli and Tomatoes : page 53
Simple but oh so good. This was a great side for my daughter and I. Grape tomatoes 1/2ed and sauteed with some chopped broccoli. Yum!

Fingerling Potato Salad : page 151
Loved this. I used the optional choice of adding bacon but didn't use the option of adding fresh herbs but bet those would have been good to. I couldn't find fingerlings so I used the option of using small new potatoes and got red ones. Loved the red wine vinegar, olive oil, Dijon mustard, salt, pepper and sugar dressing.

Mississippi Caviar : page 40
While this is considered an appetizer I added some diced tomatoes and my daughter and I ate it as a salad. Delicious. Instead of green and red bell pepper I used two small bell peppers - red and yellow. Used a half jalapeno for the hot pepper. Also omitted the hot sauce.

Sauteed Grated Carrots : page 67
I was in need of a vegetable side and realized I had all the ingredients on hand for this. Daughter and I loved it. Grated carrots, salt, and pepper, sauteed in butter with some grated ginger. The ginger was optional and called for it being chopped but I had some in my freezer so I grated it. Delicious.

Summer Succotash : page 85
Loved this one. Daughter is watching her carbs so instead of two ears of corn I upped the amount of squash and used both yellow and zucchini. Didn't get a chance to get to our local farmers market so I used canned butter beans. This was still amazing and hubby even said he enjoyed it.
