About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

This is an easy meal to make or as a side. It's actually listed in the breakfast section but I made it for a light supper. I cooked my potatoes and carrots just before doing my onions and andouille sausage. This would be a great use of leftover potatoes and carrots.

Meatloaf with tomato-habanero gravy : page 146

The gravy wasn't as spicy as I expected since you use a habanero in the tomato gravy. This was delicious and I served it as suggested with green beans and mashed potatoes. My family enjoyed it too.
