This was an absolutely delicious way to prepare eggplant. Good as a side dish, it would also make a nice addition to sandwiches.

Soffritto : page 12

This is a very versatile soffritto recipe that cooks up in about an hour and can be used many different ways. I added grated tomatoes and used it one night as the basis for a peperonata, another as the basis for a quick and simple pasta sauce. It also takes good on its own on a slice of Italian bread.

A simple, classic salad, easy to make for a light lunch. Requires high-quality Italian tuna packed in olive oil to be truly flavorful. Try substituting pesto for fresh basil.
