A really nice splurge dish on a day when you throw caution to the winds and want cheesy creamy deliciousness. The cheese sauce is terrific (sharp cheddar and Monterey Jack, whole milk, with thyme and a bay leaf). My family prefers this dish NOT baked but I think it rocks either way.
