Excellent recipe for a dinner party. You can be creative with the caramel drizzles and they look impressive! I find that 3/4 of the recipe baked in a 15"x10" jelly roll pan is sufficient for 8 people. I also make this for 4 people by using 1/2 this amount....

This is a great recipe for kids who love macaroni and cheese. We have made it with different types of pasta (rotini, gemelli), and have substituted the cauliflower and broccoli with boiled and mashed butternut squash. The squash adds a lovely orange color...

Corn Risotto with Chipotles and Cilantro reviewed by jherb

I love risotto, and this is a good one to make in the summer when fresh corn is available. The chipotle flavoring is essential, as the recipe is somewhat bland without it (having tried it that way). Also, the smoked mozzarella is an absolute must.

We like to make this in the summer. It's good with barbecued meat. We have only ever made it with edamame (fresh soy beans). Definitely use fresh corn if available. Lots of fresh ground black pepper is good, too.
