	Chicken Breasts in Nutty Queretaro Green Mole From: Rick Bayless's Mexican Kitchen: Capturing the Vibrant flavors of a World-Class Cuisine (reviewed 9th October 2010) Addictively good. The green sauce has a yummy grit to it. The chicken breasts marinate in this wonderful sauce that you sop up with Warm tortillas. It was great. I sent little samplers to my dad and brother.
	Essential Chopped Tomato-Serrano Salsa From: Rick Bayless's Mexican Kitchen: Capturing the Vibrant flavors of a World-Class Cuisine (reviewed 9th October 2010) This was ok, but not outstanding. With that said, it may serve as an ingredient in a larger taste pallet of another dish, but simply as a stand alone salsa, I wasn't blown away.
	Grilled chicken breasts in tomato-guaje sauce From: Rick Bayless's Mexican Kitchen: Capturing the Vibrant flavors of a World-Class Cuisine (reviewed 9th October 2010) Very good. I grilled the chicken and left them a bit undercooked in the middle. As it cooks in the sauce cooks into and finishes the meat. Very good
	Mushroom-Cactus Soup with Roasted Tomatillos From: Rick Bayless's Mexican Kitchen: Capturing the Vibrant flavors of a World-Class Cuisine (reviewed 9th October 2010) I loved this. Rick has a talent for presenting flavors you wouldn't expect in a fun and exciting way. Very good. I made tortillas that we dipped....MMMMMmmmmmm
	Spicy tomato-sauces enchiladas with Jalapenos and aged cheese From: Rick Bayless's Mexican Kitchen: Capturing the Vibrant flavors of a World-Class Cuisine (reviewed 9th October 2010) It was ok. At the end of the day it was like enchiladas with melted cheese. I used garden tomatoes so the sauce was sweet. Ok, but I don't think I'd make it again.
