LITTLE VEGETARIAN FEASTS: MAIN-DISH SALA
By Martha Rose Shulman
Bantam - 1992
Warm Broccoli and Potato Salad : page 15
This is one of our household favorite recipes. Don't feel much like cooking? There's some broccoli and potatoes waiting to be used? This is what we eat. The whole recipe generously feeds the two of us as a one-dish meal.
I do not refresh the broccoli under cold water. The contrast of cold broccoli and warm potatoes is too weird, and the dish can hardly be served warm if the broc is cold.

Steamed broccoli is a good addition to this.

Spicy Eggplant and Tofu Salad : page 27
Deelish, I've written on this. And Yum from another appearance. We like it.
If the eggplant is prepared ahead (e.g., the night before), the salad is quite quick to prepare.
I usually use roasted red bell pepper from a jar.

I was surprised how good this salad was. Somehow it sounded a bit of an unlikely combination. But it was very good. I served it to friends who'd just arrived off a translatlantic flight and they thought it was a great arrival meal.

Good stuff. A halfish recipe with 250g tortellini fed two comfortably.

A very good salad. This vinaigrette is especially liked here. I've addded steamed broccoli to the salad.

Garlic Broth : page 55
Excellent, easy and flavorful, vegetarian broth. Good basis for soup. I used again this Thanksgiving as the basis for gravy for vegetarian guests. The house smells of garlic as the broth is cooking, but the broth doesn't taste strongly of it.

Good stuff.
Serves 3-4, not 4-6.

Very good salad. We either add tabasco at the table or I include chili flakes in the boiling sauce.
