Very good. This is the first time I've worked with rice paper rounds to make summer rolls. Unfortunately my packet fell to the floor at some point, so there were no whole circles, making it a bit difficult to make the rolls properly.
Assemble everything, then soak the rounds one by one. As you fill one, the next can be soaking.
When you set them on a platter, it's best if they don't touch, since they seem to tend to stick together.
The dipping sauce was extra delicious.
I made all six, so the two of us had three each. Probably one or two per person would be enough. Although they were very more-ish.

I made a halfish recipe of this.
- Used spaghetti instead of spaghettini. No big deal. Use your favorite shape.
- Used 100g of smoked lardons instead of 3 thick-cut slices of bacon.
- No fresh mushrooms in-house, so I soaked some dried shiitakes instead.
- No fresh tarragon, so I used dried.
In spite of changes it was good stuff. Whole wheat pasta might be good.
