Chessy, delicious. Loaded with flavors from the pork, two types of cheese, kimchi and chives. Then the toppings sour cream, tomatoes, avocado and pickled jalapenos.

Korean Pulled Pork : page 202
This was cooked low and slow in the oven. Some interesting flavors going on - Korean soy bean paste, Korean chile paste, Korean chile flakes, limes, an orange, an onion, garlic, ginger, soy sauce and OJ. It made some great Quesadillas and Kimchi Disco fries.

Kimchi Pulled Pork Disco Fries : page 85
I made the pulled pork from page 202 so I could make these and the quesadillas on page 204. Hubby, son, daughter and I all agreed they were good. Loaded with flavor.

Thinly Sliced Beef with Rice Cakes : page 178
This was the hit with our Korean meal for hubs supper. I got the butcher to very thinly slice some rib eye for this dish. Delicious served with spicy kimchi and spicy quick pickled cucumbers from the Dok Suni Korean Cookbook. (I've made this before.) Per hubby's request I didn't add the rice cakes.

Pork Belly and Kimchi Stir-Fry wiht Tofu : page 199
Son was only one who really enjoyed this. Another dish for hubs Korean birthday meal. Daughter and I enjoyed the sauce over our rice minus the meat. Hubby didn't care for it. I ended up having to get lean striped fat back instead of pork belly since our butcher would only sell the pork belly in 16 pound boxes. I did soak the FF to remove some of the salt.

Seasoned Spinach : page 68
Made this as an accompaniment to hubby's Korean birthday meal. While it was ok none of us really cared for cold spinach which is how it was to be served. I think it would have been better warm.
