This recipe requires a little more vanilla extract (or perhaps a vanilla bean) if you prefer a more predominant vanilla flavour. Even with store-bought pastry this slice was vastly superior to any commercial vanilla slice I've tried.

Works either as a breakfast or a dessert (hot or cold). As the recipe states, it takes about 25-30 minutes to completely cook the rice in the hot milk, and it needs almost constant stirring for the last 5 minutes. The porridge will continue to thicken on standing. Prior to serving I like to add a little sweetened vanilla syrup (the type used to flavour coffees) and (if I have used skim milk for the base recipe) a teaspoon or two of cream.

A tasty enough cake, but what a mess it made! Even though I had the oven slightly cooler than suggested the layer of butter, sugar, syrup and nuts at the bottom of the tin boiled up and over the top to form a sticky pool on the tray below. Some of this 'toffee' layer also stuck to the baking (parchment) paper lining the tin. When the cake eventually cooled and was upturned it was difficult to cut slices without spraying toffee and nuts all over the kitchen bench. In future I will just make a standard butter cake with maple syrup and sprinkle nuts on the top!

I adapted the recipe to serve 2 people, using 1 bunch fresh asparagus and 200g pasta. I added more mustard, lemon juice, salt and pepper to the sauce/dressing than was stipulated, as the flavour was a little bland. Next time I might also add some herbs such as oregano or thyme.
