I just made these and haven't tried them yet, so I can't tell you how good they taste. But the recipe is very simple and easy, and who doesn't love pickled red onions? They are endlessly useful. I like them on turkey burgers myself.

Update: Just tasted one. They are still very oniony, but a great combination of sweet and sour.

First off I love the idea of pickled anything. I have tried other recipies and this is the best. This is now a staple in our house. Salad's, greek salads, on sandwhiches, in quesadillas, panini's...the list goes on. We always have a jar of this in the refrigerator. I think a key to this simple recipe is the red wine vinegar. For some reason it is difficult to get a good red wine vinegar. Still trying some out. But I did use the sparrow lane cabernet vinegar and it was amazing, but felt this was a waste of such an amazing vinegar. Looking for less expensive vinegar....have a french one marinating in the regrigerator right now!

I just started picking my own cucumbers, so I was excited to try a recipe that pickled something I really have not used in recipes before. The recipe is very simple and only requires a few ingredients.
I cut the recipe in half and I should have weighed the onion because halving the pickling liquid did not make enough. It was easy enough to create another ΒΌ of the pickling liquid.

These went great on top of the Lobster Rolls and since the recipe made a ton, I have been finding other uses for them. They go great on top of salads and pretty much any cold sandwich. They are also very good just plain as a snack.
