This seemed to us like a very wine-y version of French onion soup -- minus the cheese and bread. We were underwhelmed.

This is a recipe for pike quenelles in a Nantes [crayfish] sauce which did not work AT ALL for Soupereasy and me. My husband had this dish at a French restaurant and begged me to see if it was doable at home. So I was pleased to find a recipe for it...

This recipe calls for "dark" chicken stock as opposed to beef stock. It does miss a little bit of depth as a result, but not by much. The addition of port gives great flavor and it is a nice light version of this soup.
