This is a very easy recipe for a tasty savory pie. Because there is so much ricotta relative to the eggs, this really is more like a pie than a quiche. Because this has no crust, it was a perfect recipe for a weeknight during Passover. I made this in a springform pan with great results.

This recipe is so easy and so flexible. I have had fantastic results making it with Cup4Cup gluten free flour. My most recent variation was to add the zest of two oranges, a cup of unsweetened shredded coconut, a 1/4 cup of candied ginger and a little bit of fresh squeezed orange juice.

This is a very simple cauliflower soup recipe that comes together really quickly. I plan to serve it over brown rice and tofu croutons along with the suggested garnishes of toasted cashews and parsley.

This dish was so delicious! I made this recipe pescatarian with the following modifications: substituted vegetable broth for the chicken broth; substituted Quorn brand Chik'n tenders for the chicken thighs. I made the recipe gluten-free by using Jovial brand tagliatelle. I will absolutely make this recipe again!

Homemade Matzo

I followed this recipe using Cup4Cup gluten-free flour. I was very happy with the results; however, the bread did lose its crispness very quickly. I will only make this in small batches to be eaten immediately after baking.

Italian Wedding Soup

I made the broth portion of this recipe and served it with lentils meatballs I had made separately. It was a very tasty, quick weeknight meal. I used kale for the greens, and it was delicious.

This was excellent. I used two bags of pre-cubed squash from Trader Joe's to save some time for a weeknight dinner. The flavors in this simple dish are perfect.

I made this bread using tapioca flour. They were very good when freshly made, but I enjoyed them even more the next day!

Rugelach

Delicious! I had great success making these with Cup4Cup gluten free flour. I made some with the nut filling included in the recipe, and I filled the rest with apricot preserves.

I also had a very difficult time getting these to hold together, even after allowing for a good deal of time for the mixture to chill in the refrigerator. If I were to make these again, I would add additional moisture, perhaps mayonnaise, and some breadcrumbs to get the patties to hold together.

Spiced Lentils with Egg

A combination of red and yellow split lentils, spiced nicely with garlic, shallots, garam masala, and cilantro. The recipe has you prepare the lentils on the stovetop then bake with an egg on top. To make this a quick weeknight meal, I made the lentils on the stove and fried eggs separately.
