Lard and Butter Crust : page 208
The flakiness of lard and the flavor of butter. This is a wonderful crust for both sweet and savory pies. Not sure if it was the heat of the kitchen or the recipe, but it was very "soft" and I was afraid it would be a mess to roll out but there were no issues. Made for the Nectarine Blueberry Pie (page 119) and for a Chicken Pot Pie.

I am rating this highly with a huge proviso - they forgot the sugar!! I called the bakery (yes I did!) and was told yes, there was suppose to be 1/2 cup sugar. Of course this wasn't a huge deal because based on previous pie recipes as well as another blueberry pie in this book, I can figure out an appropriate amount of sugar but I still find it discouraging. Though this is the only error/omission I have noticed, there are a few similar complaints on Amazon. In the end the pie was wonderful - jammy blueberry goodness, sweet tart nectarines and the terrific, flaky lard & butter crust (page 208).
