Bara Brith muffins : page 263

Really good, and basically Bara Brith in muffin form. I used oil instead of butter in mine.

Lemon Blackberry Muffins : page 51

We grow blackberries in our allotment; they’re abundant so I always flash freeze the extras for baking or jam. I used half einkorn flour and a flax egg for one of the eggs in this recipe. I omitted the glaze this time. Will definitely repeat these. Made another version with oranges and rye flour. Also excellent.

Michigan cherry muffins : page 45

Really excellent tasty muffins. I made a few changes due to my supplies; I used fine wheat bran (Flourist) and some oatmeal instead of oat bran, and I have also made these with a flax egg substitute. The dried cherries are perfect in these.

Mincemeat Muffins : page 86

Very good muffins. I made changes; used einkorn flour for half the flour, added some spices (extra cinnamon, cloves, allspice), used 1 egg only. Baking time stated was too long, should probably be 18-20 minutes. An excellent way to use some extra mincemeat, with changes in bake time I would give it 5 stars.

Parsnip pear muffins : page 226

I had parsnips from the garden, so I decided to try these and they are very good. I made half the recipe as written and the resulting muffin was very nice. I found them a bit too sweet so the next time I made several changes; I cut the sugar by about 25%, increased ginger and nutmeg a little, and subbed dried cherries and walnuts for the raisins. Once revised we really loved these muffins. Will def make again when we have parsnips.

Plum muffins with hazelnut crumble : page 228

These muffins were very tasty. I used the full amount of crumble and it really added to the finished muffin. First use of my Oxo muffin cups was a success, took 25 min to bake. Next time I would increase plums a little.

Vanilla banana whole grain muffins : page 314

Very easy, adaptable recipe. Muffins are grainy without being too heavy. They freeze well, will definitely make again. This recipe contains 2 eggs; I used 1 plus a flax egg substitute which worked well.

Whole wheat blueberry muffins : page 52

These were good and not very sweet. I omitted the topping. I did use rye flour for the whole wheat. Will definitely make again.
