A really tasty little salad. We're not bell pepper fans, but this worked for us both.
I used harissa for the red pepper paste.
It would be especially pretty to use a mixture of red, orange, and yellow bell peppers.

Your basic pilaf. Always a nice change from plain rice. I neglected to soak the rice; no problem.

Shredded Beets with Thick Yogurt : page 30

Shredded beets in yogurt cheese, lemon juice, and a tad of garlic. I loved this; Ed not so much.
I thought it would make a nice little salad, rather than a sauce/dip.
