I saw this recipe and noticed how easy it was and was intrigued because I can probably count on one hand how many times I have had beets in my life and probably all from a can.

This recipe was nice and simple and produced an excellent end product. Once sliced up, I ate some of them just plain and have been using the others in salads. This recipe has opened my mind to eating beets.

Keller's method is, as usual, superb, but also as is frequently the case, there is way too much added fat. I find a mere drizzle of oil and NO butter to be sufficient for excellent results. Like the other reviewers, I think the paper towel tip is brilliant.

Simple and delicious- but I did not add the butter. Like the other reviewer, I also slice these and use them in salad. The light bulb tip is so helpful and makes cleaning the beets so easy.

I make these baked beets all the time. It's a great, simple recipe for beets. I've done golden beets, red, beets, and Chioggias. I usually bake them off following Keller's recipe and then slice or dice them and add them to salads. Also, his lightbulb idea of rubbing the beet skin off with a paper towel is genius!
