I didn’t care for quinoa. It was a bit bitter. The recipe suggests serving with pesto which I think would help.

Most quinoa is bitter unless it is rinsed once or twice before cooking, unless you buy a pre-washed brand. We cook our quinoa in a little bit of stock (veggie, chicken, whatever we have) and it is slightly nutty and not bitter at all.
