	Ricotta and Pancetta Stuffed Pork Chops From: Two Dudes, One Pan: Maximum Flavor from a Minimalist Kitchen (reviewed 27th April 2013) Have made this several times - always wonderful. Their Classic Marinara which is served over the chops, is simple and delicious. I cut back on the salt a bit (personal preference) and sometimes add a sliced mozzarella during the last few minutes in the oven.
	Spicy Roasted Cauliflower, Capers, and Parm From: Two Dudes, One Pan: Maximum Flavor from a Minimalist Kitchen (reviewed 14th May 2013) Simple and tasty, as roasted cauliflower usually is. The capers are a nice addition.
