"Everything" Chicken Sandwich Melts : page 223
This was excellent and all the chicken lovers in the family enjoyed it. I made Naan bread to serve it on since author suggest either that or lavash bread. I didn't have caraway seeds but did use all the other seeds and seasonings. A bit spicy but wonderful. This is one I'll be making again and again.

Made this for part of our Christmas supper at my Dads. Daughter and I were the only ones who liked it but we thought good. Lots of flavor and pretty too.

Daughter, hubby and I loved this salad. Hubby has problems with nuts so I omitted them in his. I used pecans instead of walnuts since we enjoy them so much and I already had them on hand. I used a Gala Apple.

Cayenne-Candied Walnuts : page 71
These were excellent on the salad on the same page, Butter Lettuce with Blue Cheese and ...... I did use pecans instead of walnuts since I had them on hand. These would also make a great appetizer or just to eat as a snack but were also a great addition to the salad.

Charred and Garlicky Broccoli : page 173
While daughter and I though this was ok, son-in-law didn't like it and hubby wouldn't even try it. Prob wouldn't make again.

I normally only enjoy soft scrambled eggs. Well these are far from soft scrambled since you stir them for 12 to 14 minutes. It seems to work with the cream and topped with the burst tomatoes though. I still enjoy soft scrambled ones better though and think I might try them topped with the burst tomatoes. Not sure the eggs made me think they were cheesy though. I served them with the Garlic roasted bacon page 17.

Cheesy Guacamole : page 147
Daughter and I loved this. We've never had cheese in Guacamole but it was very good. All the other usual suspects - lime juice, avoacado, onion, tomato, jalapeno, garlic, and cilantro. Also had some cumin and cayenne pepper.

Cheesy Jalapeno Bacon Cornbread : page 93
I made a half recipe of this for hubby and me. We loved it. It called for three eggs in whole recipe, in half recipe I used one and it worked fine. The cheesy part comes from cheddar and Parmesan and the jalapeno from diced pickled jalapenos. I used some of my sisters home caned pickled jalapenos. Creamed corn and buttermilk gives it some moisture.

My daughter and I loved this and son said he'd like it without the peas. Lots of cheese, cream of mushroom soup, tuna, pasta and some heat from jalapenos and the jalapeno potato chip topping. Probably not the lowest calorie food but sure fun for an occasional splurge. YUM!

Daughter and I loved this version of Chinese chicken salad. The fried wonton strips really added a nice crunch and taste to the salad. I love that it uses rotisserie chicken.

This mac and cheese is super cheesy from three cheeses. I used Comte instead of the Swiss or Gruyere since I had that on hand. Other two cheeses were cheddar and American sliced. Delicious!

Made this for daughter, son and my Mother's day supper. Son ate his without the avocado and corn. Daughter and I though this was delicious. Loved the dressing.

Creamy Parmesan Skillet Eggs : page 23
This was very good. I made a half recipe for my breakfast. I don't think I cooked the cream mixture enough before adding in my eggs since by the time my eggs were done enough my cream mixture didn't look crispy like hers. I may try this one again.

Creamy Potato Salad with Bacon : page 97
This potato salad was a bit different than mine which we all love. I only use mayo with the potatoes, onions, eggs and dill pickles. Son and hubby don't like celery or I'd add that. For her dressing she uses mayo, yellow mustard, Dijon, and sweet pickle relish. I made it that way and used dill instead of sweet though since we really don't care for sweet in ours. Bacon is added, and the usual suspects of boiled eggs and onion - red here, and also green. For a hint of spice a large jalapeno is also added to the mix. Quiet good.

Dump and Done Ramen Salad : page 75
I really liked this but not as good as the Chinese Chicken Salad that uses toasted ramen. Some of the noodles in this one got mushy soggy. Does have a good flavor though and I love the peas, and corn in this one. Also toasted sunflowers seeds were a nice addition. The Chinese Chicken salad uses toasted almonds. My store was out of broccoli slaw so I just got a bag of shredded cabbage mix.

Frito Pie Bar : page 148
I made John's Chili on this page for the Frito Pie Bar. The chili was great in the Frito pies. It was a little on the thin side and we like our chili really thick. Despite that fact it was still great. Next time I think I would use less water than the 2 cups called for in the recipe. I did substitute black beans instead of the kidney called for since son doesn't care for kidney beans but likes black ones.
My store didn't have the small individual bags of Fritos so I just got a big bag and we served ours in bowls instead of the bag.

Garlic-Roasted Bacon : page 17
While this bacon was very good with the eggs and burst tomatoes from page 16 it does leave you with morning garlic breath.

Il Buco-Style Kale Salad : page 60
Daughter loved this one but I thought it a bit on the tart side. I did enjoy it though as long as I got a bite with one of the homemade croutons. Couldn't find dinosaur kale so I got curly.

These are similar to McMuffins. Homemade sausage and some siracha to spice them up a bit. Very good.

While I did remember to use lemon zest in the marinade I forgot to char some lemons along with the chicken. Despite that fact this chicken was amazing. I almost tasted like it's been done on the grill instead of in a cast iron skillet. The foil wrapped bricks help weigh down the chicken to give it a nice crust. Marinade times was from two hours to overnight and I did mine for a little over two hours. I'll definitely be making this one again as we loved it.

Mexican Street Corn : page 167
We've made Mexican Street corn before and loved it. This version is fantastic too. In addition to Cotija cheese it also has Parmigiano-Reggiano. Instead of in a fry pan we did ours on the grill. If omitted the cilantro since some of my family aren't fans.

Pot Pie Soup with Crust Crackers : page 51
Daughter and I loved this version of chicken pot pie in soup form. Hubby enjoyed it but son-in-law didn't much care for it. I realized I didn't have enough butter to make the crust too so I improvised and used some frozen pie dough instead. It turned out good. I will make this again.

Risotto with Porcini Mushrooms and Peas : page 179
Made this one day for my daughter and my lunch. We loved it. It called for 2 oz of dried porcini and since it was over $5 per oz I only got one. This made plenty of mushroom for the amount of rice.

Roasted Jalapeno and Chorizo Queso : page 153
While this is an appetizer I took a hint from Chrissy and served it as our supper. Hubby, son and I all enjoyed. It was on the spicy side though and I can only imagine how hot it would have been had I used all six jalapenos called for, 5 roasted, seeds removed, and the final one left seeds in and diced and added in at the end raw. My jalapenos were huge so I used 3 roasted and one raw and I removed the seeds from all. My Mexican Chorizo was hot too though.

Rotochick Chicken Noodle Soup : page 44
This chicken noodle soup was very good. Quick and tasty. Uses rotisserie chicken, fresh veggies and chicken broth. I served it with buttered crackers as suggested by the author.

Spicy Cajun Sausage, Peppers and Cabbage : page 205
Hubby and I loved this one. Instead of the red and green bell peppers called for I used some baby sweet peppers in red, yellow and orange. This was delicious. I will be making this one again. We ate it with cornbread.

Spicy Italian Sausage Meatloaf : page 202
While this was very good we thought the sausage a bit over powering. It calls for half ground beef and half spicy Italian sausage. I couldn't find the spicy so got mild. Love the addition of carrots and mushrooms. This was much better after we added more ketchup.

Steak Bites with Melty Blue Cheese Butter : page 124
While this is really an appetizer daughter and I had them as part of our supper. I made whole steaks for the guys in my grill pan and son ate the blue cheese butter on his. We though these were delicious.

Made these for mine and daughter's lunch one Sunday. They were delicious. I did use shredded cheddar instead of sliced since that's what I had on hand. Love that these are grilled. The tomato is a great addition.

Vegetable Tortilla Stew : page 55
Made this one for daughter and I while staying with her when she was on complete bed rest before her baby was born. We both thought it was amazing. Loaded with lots of flavor. The crispy corn tortilla strips gave it a nice touch and they were even good by their selves.
