Key Lime Pie

I found I needed an extra Tbsp of butter for the shell, perhaps because I was using Granitas to substitute for the Graham Crackers.

Absolutely delicious. Make sure you cut small slices so you can offer seconds!

Osei e Polenta (Sparrow skewers on polenta)

Sparrows on sticks? Please. The little mice with wings are nesting in my gutters but I'm still not going to a) catch them, b) pluck them, c) clean them, and then d) cook them on sticks. It's "one bird, one bite" and it's too much work!

Marmalade and Fig Sponge

I use Rose's Lime Marmalade and substitute pecans for walnuts (I never use walnuts, I find them bitter). If I feel luxurious, I soak the chopped figs in Muscat.

Substitute honey for the treacle for a different taste. Don't turn the oven on to pre-heat until step three where you chill the dough for 30 minutes!

Spiced Pot Roast

Waaay to much brown sugar. I'll try 1/4 cup next time instead of the 1/2 cup in this recipe.

I will also allow it to cook for perhaps another 10-15 minutes to get that melting effect.
