Not Your Mother's Casseroles

Very simple to prepare - I did cook it immediately, so can't speak to how it works after sitting overnight.
Portions are generous, and it reheats well. The coconut and steel cut oats give it nice texture. I did add a little extra spice.

Really great way to use eggplant if you're not into eggplant parmesan. The combo of flavors is really delicious - pretty much ideal summer food.

The recipe has you make it at least an hour ahead of eating, but since it is a soba noodle dish, I made it about three hours ahead of time (and could have done more). The flavors definitely meld better with some time to stand.

Zesty Chicken Enchiladas

I made this with the shortcut version of the sauce (using store-bought salsa). It wasn't bad, but I'd definitely need to try this with the real sauce before passing final judgment on the dish.

Warm Winter Salad

Lamb-Stuffed Eggplant

Not bad - had good flavor.

Thai Green Beans

I didn't add tofu, and didn't bother to serve over rice, as I was using this as a side. The sauce is very quick, and quite good, though a little heavy on the ginger. (I suspect this wouldn't have been the case if I'd had either the tofu or rice included.)

Sloppy Joes

Found this when the BF was craving sloppy joes from a can. Quick to make, and great flavor. I served with the mustard version of cole slaw (linked in the recipe), and had a very satisfying meal.
