Angel Biscuits : page 39
I had never had Angel biscuits before but came across them during my quest for a "high rise" biscuit. The yeast definitely helped provide the lift I was looking for but not sure how these would work for a crowd of very opinionated Southern biscuit lovers. Still looking for a traditional big biscuit... in the meantime I will continue to enjoy these at home. The flavor and texture were nice and they came together easily.

Apple Cake : page 215
I loved this simple cake! Halved this recipe and put it in a glass lasagna pan. It came out quite under done even after adding 10 minutes to the cooking time. Back into the oven it went for another 10-15 and we were rewarded in the end with a moist tender cake perfect for a bbq dessert (or snacking or breakfast).

Blueberry Granola : page 34
Great granola! I was afraid it would be too sweet (for me) with the 1/2 cup honey so I reduced by 3 - 4 tablespoons. I toasted my coconut flakes before adding and was very generous with the cinnamon. Addictive!

Buttermilk Bacon-Fat Flour Tortillas : page 26
I have made these several times with buttermilk and they are always great, but the best version is with spent (slightly soured) half and half! Not sure what the half and half did but both the texture and flavor were super! I don't often have half and half that goes over, but when I do I will be making these.

Butterscotch Brownies : page 203
These are DECADENT! Gooey and delicious with brown sugar and butter toasted pecans. I did not have a 9-inch pan so made them in my 8-inch and added 10 minutes onto the baking time. They were still pretty gooey but once cool the texture improves.

Chipotle-Blue Cheese Wedge Salad : page 82
Great dressing - otherwise just a regular old wedge salad. The blue cheese-chipotle combo is a nice variation.

Cowboy Beans : page 107
Great pot of beans! I love the addition of the jerky (instead of the usual sausage or ground beef). They hit every craving - spicy, sweet, rich and savory. These are easy to throw together and they take care of themselves after going into the oven for a low, slow cooking time.

Sweet Potato and Chipotle Tortillas : page 28
These are very soft and delicious. I made mine gluten free which made them a little fragile but I'm sure they would be perfect with all purpose. I do think this recipe needs a bit more salt.
Update: Made these again with AP flour and a tiny bit more salt and they were terrific - pliable and tasty.

Tomatillo-Chipotle Salsa : page 242
This is a simple cooked salsa with great tang from the tomatillos and a bit of smokey flavor from the chipotles. I roasted half of the tomatillos for extra roast-y goodness. Have served with smoked brisket, chips and tacos.
