I enjoyed these pancakes much more than the perfect pancake recipe from the same book. They have quite a strong flavour from the spices (cinnamon, ginger and nutmeg) and reminded me of her pumpkin muffins which are delicious. Next time I will slightly reduce the spice mix.

A fairly easy recipe with few ingredients still makes a creamy sauce with fresh tomato flavour. I sauteed some onion and mushrooms along with the garlic to add to the sauce and then threw some kale in the pasta pot at the end because I like more veggies.

I was tempted to mess around with the spices because I'm not a huge fan of the cinnamon flavour in garam masala. I followed the directions strictly the first time around but will definitely alter the seasonings next time. I love kale so any recipe that uses kale in a different way is usually a hit with me. I liked the texture of the grated tofu mixed in with the rice, onions and kale. The recipe made quite a large amount and I think this will be just as tasty heated up for left-overs.

My husband and daughter loved these cookies but I found them a little on the heavy/doughy side. I would award them three stars and they said five so we are compromising with four stars.
ETA: I made these once accidentally forgetting the vegan butter completely and they still turned out quite well. They weren't too dry and had a good texture.

This is the first dessert I've made usuing silken tofu and I was very surprised at how undetectable it was in these delicious squares. They are best eaten fresh and I found the sifted icing sugar on top unneccesary to enjoy these simple, lemony treats.

The batter was very thick, almost the consistency of cookie dough so I wasn't sure how this was going to turn out but it was very good. Moist, fairly dense but not heavy and not too sweet. It reminded me of coffee cake or an apple cinnamon muffin in cake form. I made it without the brown sugar syrup.

Very flavourful dish. I allowed the potatoes and cauliflower to cook longer than the recipe recommended so the flavours would have more time to meld. The cauliflower flowerets broke down and were very soft but we didn't mind. I added a little more than the teaspoon of brown sugar called for as well as more salt.

This is a delicious and slightly sweet chili that even my daughter enjoyed. I substituted peach juice for the called for apple juice because we didn't have any and it added an interesting flavour. I think next time I will use the apple juice and a slightly smaller squash or just more beans.

The sesames and cumin sprinkled on top added a wonderful flavour to this flatbread. Instead of using all purpose flour as the recipe called for I substituted Indian Durham Atta flour. As a result, the flatbread was a little sturdier and chewier. I will definitely make these again and perhaps mix the flour half and half.

I love apple pie but hate making pastry so I love discovering desserts with an apple pie type filling. This was a simple and homey dessert almost like eating upside down apple cake. I did not have applesauce on hand to use in the batter so had to use a cup of extra soy milk instead. It turned out just fine but I am curious to see how different it will be next time with the applesauce.

The dough was very dry and I wasn't sure if they were going to turn out but they held together in the oven and were tender enough. I added a cup of raspberries but you could use any fruit.

I made these a second time and they were awesome. This time I added chopped peaches and strawberries. The dough wasn't the least bit dry, I'm not sure what I did wrong the first time around but this time everything was perfect.

These muffins have a lovely, mildly sweet and fruity flavour. My only reservation is with the texture which was on the chewy side. I don't know if this had to do with the absence of oil or if it was overmixing on my part although I was careful not to overdo it. I will definitely make these again. I'm happy to find a recipe for muffins sweetened entirely with fruit, juice and maple syrup.

The perfect soup to warm up chilled bodies in the middle of winter. This pureed medley of root vegetables featuring parsnips as the star, was warmly received even by my five year old who is notoriously selective with her veggies. I found the parsnip flavour to be quite strong but will gladly make this again if my child will actually eat it.

I love the earthy flavour of hummus and the roasted red pepper adds a wonderful undertone to this dip. I made this recipe for a party and served it with fresh veggies and tortilla chips and it was a big hit - two or three people asked me for the recipe.
Once the red pepper is roasted and the skin removed, all the ingredients are just whizzed up in a food processor, very simple and delicious!

This is a heartwarming and beautiful soup. The colours and flavours of the broth and vegetables are warm and attractive. I've never used this particular combination of seasonings together - turmeric, basil, paprika and pinch of cayenne. I liked the flavour.
I had to add a little more water to the pot after adding in the chickpeas and peppers or it would have been more like a very thick stew.

I was attracted to this recipe because it doesn't contain any sugar - sweetened solely with apricots and some maple syrup. I enjoyed a warm slice after dinner with a cup of tea and it was moist, not too sweet with nice chunks of almonds.
The suggested baking time was 1 and a half hours but a little after one hour the top was looking very crusty and brown so I took it out. Total baking time was about 70 minutes for me so if you make this keep an eye on it.

This soup has all the flavours I love; roasted bell peppers, tomatoes, garlic, chickpeas, coriander and rosemary. I found the rosemary a little too dominant and will reduce the amount the next time I make it. It’s a very hearty soup and made for an easy week-night supper and with a few, tiny tweaks it gets a big, thumbs up!

A simple and effective way to make your mashed potatoes a little healthier. The author makes it easy to jazz up the flavour with 6 suggestions of various ingredient additions such as herbs, garlic, nutritional yeast, lemon zest etc.
I made them simple the first time and think they would taste even better accompanied with some kind of gravy or served with a saucy dish.

I wasn't sure if I was going to like this Hoisin-Mustard combination but I was curious enough to try it and I'm happy to report it was delicious. If you like honey-mustard sauce then you will probably like this flavour combination with ginger, garlic, mustard and the Hoisin barbecue sauce making for a great sweet and savory mix. Wrapping the tofu mixture in lettuce provided the perfect crisp complement. I used Romaine instead of iceburg and my husband and I gobbled this dish up.
