Don't be tempted to put more jam into each cookie than is prescribed - it will boil over and blister and look a bit bad (although it will still taste nice :) The raspberry cookies are a perennial favourite at our house.

I've been making these for years! The recipe has been reprinted several times over in AWW's various cookie/biscuit cookbooks. Sometimes I vary the recipe a little by adding a few currants or finely chopped glace cherries, but usually I stick to the regular recipe with sultanas. Another variation I've seen includes a small amount of finely grated lemon peel which adds a fresh zestiness. That's lemon peel, not dried mixed peel ;)

A lovely aromatic chilli topped with a nutty, cheesy layer of baked cornbread. The 'secret weapon' here is the addition of cocoa to the chilli. Fantastic served with lashings of sour cream.

The perfect mild chicken curry. Best eaten reheated the next day, allowing flavours to meld and deepen. Sprinkle with some toasted flaked almonds prior to serving. This has become one of my favourite home-made curries. Just gorgeous!

Beautifully balanced combination of orange and chocolate flavours with a lovely moist texture. I was able to cut the cooking/prep time down dramatically by using my Tefal pressure cooker to boil the oranges (15 mins of cooking rather than 2 hours of boiling!). The cake also works as a dessert served warm with some good quality vanilla ice cream.

Works either as a breakfast or a dessert (hot or cold). As the recipe states, it takes about 25-30 minutes to completely cook the rice in the hot milk, and it needs almost constant stirring for the last 5 minutes. The porridge will continue to thicken on standing. Prior to serving I like to add a little sweetened vanilla syrup (the type used to flavour coffees) and (if I have used skim milk for the base recipe) a teaspoon or two of cream.

I make these fairly often, they are delicious. Made with desiccated coconut, coconut milk and glace cherries, then sprinkled with icing sugar when cooled.
Update: I now reduce the amount of sugar to just under half a cup, and omit the icing sugar topping. The glace cherries seem to provide more than enough sweetness! :)

Makes two cakes, so you can eat one now and freeze the other for later. The texture and flavour are excellent. I sometimes substitute the almond topping with some chopped pecans.

Falling Cloudberries: A World of Family Recipes

I've made these several times and they are usually very nice, especially served with cranberry sauce and some plain boiled potatoes. You need to let the bread soak in the milk for a while and only make small meatballs to ensure they don't fall apart. I cook them on a low heat for the first 5-10 minutes with a lid on the pan to 'set' the meatballs. Then, to brown them, shake the pan gently to roll meatballs around and cook on all sides, rather than grab them with tongs. For the sauce I prefer to use a low-fat sour cream as the full-fat version is rather rich. Sometimes the sauce will separate a little but it reconstitutes very well on re-heating.

A wonderfully delicate and creamy chicken curry. Best eaten at least 24 hours after cooking. Use freshly ground spices for maximum flavour and aroma.
This recipe also appears in Nigella Lawson's book, 'Feast' and was featured on the accompanying TV series.

This is another delicious recipe from Jamie's new book, but once again not achievable in 15 minutes (IMHO :).
I substituted the ready-to-eat pack of lentils with 250g of well-drained, canned lentils and the koftas were moist but stayed intact and didn't fall apart. The curry sauce is fragrant and slightly tart and the dish pairs very well with the accompanying fluffy rice, beans and peas.

Delicious, sticky and lightly spiced chicken thigh pieces with a green bean and celery salad, dressed with soy sauce, sesame oil, honey and rice vinegar. I find it quicker and easier to fry the chicken in a pan, rather than bake it in the oven. This method also results in a thicker, tastier sauce.

This is an excellent recipe, which I followed very closely with the exception of putting the flour on the pans. The pans I used were brand-new and non-stick so no need for flouring. I chilled the batter for two hours in the fridge and the madeleines rose beautifully.
My batter made 21 madeleines across the two pans and I cooked each tray for about 10 minutes at 190 degrees Celsius. I will probably reduce the temperature to 180 next time as the side of the cake in contact with the pan did brown a little too quickly, while the tops were just slightly dry.
I dusted one cooked and cooled batch with cinnamon sugar and the other with just sifted icing sugar.

I exclude the mixed peel (...hate the stuff!) and just add a little extra fresh orange and/or lemon rind. Treacle can also be replaced with golden syrup. As with most fruit cakes, this one keeps well in a sealed container in the pantry for weeks (maybe months?).
