About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

5 Ingredient Beef Enchiladas

This is a quick and easy work night supper recipe. Delicious as well. I couldn't find the thick shredded Mexican cheese called for but it was still amazing. I could only find a big can of enchilada sauce and my son says he likes them saucier so I just used the whole can.

Instant Pot Spaghetti

Daughter makes this for her family often and they love it so I decided to try it for us. We enjoyed it too but next time I'll be sure and stagger the pasta a little more when adding to the pot since I did experience a little clumping but not much and it turned out really tasty.

My son loves yellow curry and hasn't had it in awhile. That's what he always orders when we go to an Asian Fusion restaurant out of town and we haven't been in a long time. He said he saw one for the instant pot online so I did a search and found this one. I've made several of Karen's recipes and they always turn out great and this one was no exception. Son said it's as good as the one he orders and he wants me to make it again. He found some great precooked jasmine rice at Walmart for a great price so we used that instead of cooking our own. I also realized at the last minute I was out of curry powder so I made my own from a recipe online.

Tomato Cheddar Pie

Love trying new to us tomato pies and tarts during tomato season. I used white cheddar for this. Instead of making the crust recipe in the book I used a bought crust. We enjoyed this version but like the one I keep coming back to every year from Roy F that contains mayonnaise and a combination of cheeses.

I thought these were going to be really good. They don't have a lot of flavor though. Maybe not enough vinegar. It uses very little rice vinegar. They're ok but I think I might try adding a bit more vinegar and maybe a pinch of sugar.

Son and I had these for lunch. Very good. I couldn't find horseradish cheddar so I used cheddar and a chopped horseradish in a jar. No poppy seed bagels so I used everything bagels.

Garlicky sesame-cured broccoli salad

This one says you can leave at room temperature for at least an hour or up to 48 hours in refrigerator. I decided to make the day before I was planning on eating. I'm not sure why but I didn't care for the taste of the broccoli this way. I enjoy all the ingredients involved but somehow this didn't work for me taste wise in the finished dish. I kinda hate to give it a low score because it's not the recipe itself that doesn't work it's that I didn't enjoy the taste.

I used a grill pan instead of outdoor grill to grill the asparagus for this salad. Delicious! Loaded with flavors from the tomatoes, pearl mozzarella, asparagus and the wonderful dressing of EVOO, balsamic vinegar, basil and garlic.

Made 1/2 recipe for my breakfast. I didn't have hot smoked paprika but did have just smoked so I used that. Had anchovies I bought for another recipe. Really didn't taste them in this. Never thought of adding tomato to an egg salad sandwich but really enjoyed it. I had a great tomato from farmers market and made sandwich on a toasted whole wheat sandwich thin. Very tasty version of egg salad.

Studendous hummus

Son and I enjoyed this one. We like trying new versions of hummus. I also made the cumin salt as suggested and it was a nice addition. I didn't cook the chick peas since I was unable to find dried at any of the stores I checked so I used canned. Two cans yielded a tiny bit more that the recipe called for and not wanting to waste them I just added them in.

This one is a bit on the sweet side but still delicious with a cup of coffee. Easy to throw together with things I already had on hand.

Made a half recipe for my supper one night. I had cumin seeds but not coriander seeds so I used a smaller amount of ground coriander. I'll be making this again. Easy and delicious. Nice flavors from the lemon, chili powder and other spices.

This was delicious. I cooked it in the instant pot then shredded it in my kitchen aid with the paddle attachment. We don't like our bbq real sweet so in addition to the Sweet Baby Rays sauce I added some ketchup and apple cider vinegar.

Potato Waffles

I used the leftover garlic and Parmesan mashed potatoes as suggested. I liked them better than the original potatoes. The bites of bacon with the waffle was delicious. Ketchup was also good on them. I'm sure I just made someone cringe. These waffles remind me a bit of the mashed potato cakes I've eaten and made all my life. I do like my families version better but these were still good.

Loved this version of beef stroganoff. The addition of Boursin Cheese along with sour cream is genius. Also loved the large amount of mushrooms and other spices in this version.

I didn't do the optional topping. First taste I had to add more butter and Parmesan. Made them better but I prefer my mashed potatoes with milk and not potato water. This is my least favorite recipe from this cookbook. Hoping to try the Potato Waffles p. 71 with some of the leftovers.

Lime sherbet popsicles (Paletas de limón con crema)

We didn't like these quiet as good as the strawberry popsicles but they were still good and grandson loved them. The rest of us thought they'd have been better without the lime zest.

I used brown basmati rice and it took twice as long to cook as the recipe stated and I did have to add more water. It turned out delicious but my family said they prefer the Spanish rice their grandma made better.

Braised black beans (Frijoles negros de la olla)

Husband loved this. I used the stove top method. We liked the addition of apple cider vinegar, onions and jalapenos. Took a little longer to cook but I couldn't find the suggested brand of black beans.

I used jared cactus since I couldn't find fresh. My family really enjoyed this. The salsa verde was quiet spicy. It called for 10 tomatillos which I used 9 but one was very big and 4 jalapenos and mine were huge so I just used two.

Another spicy dish from this book and oh so delicious. We loved these spicy shrimp served on a toasted baguette. I did make a half recipe since it was for hubby and I only. I had mine with a salad which helped cool my mouth.
