Broiled Pineapple With Rum

Just was our least favorite thing from the Dead of Winter Dinner from the Supermarket menu. The menu also included Romaine Hearts with Shaved Parmigiano and Lemon Dressing, Panfried Steak with Steak Sauce, and Classic Potato Gratin.

Neither my husband nor I cared for the taste of this one. We would have preferred to have our pineapple unadorned than this way. I'm glad I only fixed us an individual serving each.

Huevos Hyacinth

This recipe didn't work for me. The recipe says to broil the layered ham, tomatoes, eggs and cheese. I think it really needs to be baked instead then maybe broil a couple minutes to melt the cheese? I tried broiling for the 2-4 minutes suggested for a slightly runny yolk. After 4 minutes the whites were completely raw. I tried for 4 more minutes and the yolk looked like it was starting to get too done for my taste and the cheese was starting to brown. I removed from the oven and the white was still runny. I enjoy a runny yolk but not the white. I ended up popping in the microwave for a few seconds which unfortunately over cooked the yolk. This still tasted ok but not what I was hoping for which was a runny yolk and a done white. I did like the taste of the egg, tomato, ham, and cheese together. I used a Mexican crumbling cheese.

This is a vegetarian version of mac and cheese. We did do a few substitutions. hubby and son won't eat cilantro (they have the gene that makes it taste like soap), so we used flat leaf parsley instead. I only had 2% milk on hand so we used that instead of whole. We couldn't find flax seed tortilla chips so we got multi-grain. Rachael did suggest any specialty tortilla chip if you couldn't find flax seed ones.

This was alright but none of us really liked it enough to make it again. At first I forgot to serve the sour cream along side. We had already taken a few bites each when I remembered it. We did think it was a bit better with the sour cream stirred in. I'm glad we tried it but it's not one I'd make again for our tastes.

Meatball Stroganoff

This really didn't taste like any stroganoff that I've ever had. I though it was Ok but hubby didn't like it at all and son just thought OK like me. The meatballs were the best thing about it. Hubby didn't like the sour taste from the lemon juice. I'm glad I tried it but don't think I'll make it again.

Jack 'O Lantern Cake Pops

We tried making the Halloween Cake Pops from the cover of the BC fall baking booklet. It turned in to a complete disaster for Sarita, Tesia and I.

We followed directions and let the cake balls sit in the freezer for 15 min then switched to fridge. We took out one ball each after melting the Wilton candy melts in the microwave. The balls slid up the sticks or fell completely off, so we returned the remaining balls to the freezer for another 20 minutes then back to the fridge.

We remelted the candy melts but they were still way to thick. We followed a trick on the pack of the candy melt package to add some shortening and return them to the microwave. Still too thick.

We tried to get them to coat the cake balls by drizzling them with a spoon instead of dipping them, but not much luck there either. We finally gave up and ate some of the cake balls without the candy melt coating. They were good that way. None of us liked the way the candy melts tasted anyway.

We did manage to get a few coated without them falling off the sticks, but when they dried they were bumpy and the food markers wouldn't write on them. We decided to call this a total failure except for the cake balls being tasty by themselves.

I'm not really a big fan of cooked turnips but I do like them roasted with other root veggies. My daughter and I couldn't decide if we liked these or not. The bites with more parm tasted a bit better than the other bites. Our turnips were a bit strong so maybe that was what turned us off. I'm glad I tried it but not sure I'll be making it again. Hubby thought it was horrible.

Touch-of-Grace Biscuits

These were fun to make but I discovered we don't like sugar in our biscuits. I already knew we didn't care for sugar in our cornbread. Of course I do like sugar in my sweet potato biscuits and also biscuits that are used for shortbreads. These were light and fluffy, in fact so light they didn't hold up once I inverted them from the pan onto a plate. They fell apart. I usually use buttermilk for my biscuits but since I had some cream that needed to be used I decided to go with that option. I did add a bit more flour to mine since it was so soupy it wouldn't scoop, those could have been my fault since I used the dip and sweep method instead of weighing. Interesting technique to use an ice cream scoop to dip the wet dough into some flour and then shape the biscuits with your hands. I used self-rising flour for the dough and all-purpose for the shaping per the instructions. I often use White Lily flour (which is her suggested brand) but only had some store brand on hand. If you prefer sweet biscuits then give these a try.

Baked Egg souffle

Hubby nor I liked this enough to make again. I cooked his a bit longer than mine since he likes a very well done egg. He said he would have liked it better with the addition of salt and maybe some salsa after baking. I hated that the yolk of the whole egg was so well done but the scrambled eggs with the heavy cream that was poured around was still jiggly. I could still eat it with some bacon and toast but didn't like it well enough to try again.

This was easy to make by cooking the pasta first then mixing all the other ingredients with it in the slow cooker. You then cook on low for about 3 1/2 hours. I was afraid the pasta would get mushy in the slow cooker but it held up great. What we didn't like was the grainy effect of the cheese and the eggs seemed to scramble in the mix. I hadn't ever had eggs in mac and cheese but knew people put them in sometimes. I found neither me nor my daughter like them in ours.

Stove-top baked beans

I couldn't find canned navy beans so I used canned northern beans in this one. Neither I nor my family cared for these. We thought they had a vinergy taste even though I only used the amount called for. They were also a bit too soupy for our tastes even though I cooked them longer than what was stated trying to get them to dry out a bit.

I really thought this was going to be delicious but none of us cared for it. I cooked this to use up some of the abundance of yellow and zucchini squash and to go with a summer garden meal I was making at my Mom and Dads. It lacked flavor for us. Not sure where it went wrong, maybe just a taste preference.

I have never tried rice pudding and didn't think I would like it since I don't care for sugar on my rice. My husband on the other hand loves rice pudding and I've never tried making it for him. When I found this recipe I though I'd make it for him as a surprise. Unfortunately the surprise was on me. He hated it. I actually didn't think it was that bad but since I wouldn't make it again. I don't think there is anything wrong with the recipe I just think it was a taste preference on my husbands part. I'll leave the rice pudding making for him up to his Mom from now on.

We really didn't care for these muffins and it may have been my choice of beer. Since I had some Guinness on hand and we enjoy other things I've made with it I used that. These may have been better had I used a lighter beer instead. There was nothing wrong with the recipe itself. I made a half recipe and ended up with seven muffins. The baking time was spot on and they were golden and beautiful. We just didn't care for the taste.

This one takes some time to cook and we really didn't think it helped the meatloaf from the same page. We didn't think it was worth the trouble nor did it help the meatloaf much. We preferred the meatloaf without the sauce.

This salad was way to tart for our tastes. I only called for a teaspoon of brown sugar. If I made it again I'd add more sugar to the dressing for our tastes. I made it to take on my birthday and anniversary picnic. It was fair with the baked beans and chicken.

I'm not sure why but I really didn't care for these. They sound delciouos but for some reason, not sure why, I just didn't like them that much. I did use dark chocolate for the top since that's what I had on hand but she calls for semisweet. I think I'd like them better if they had some peanut butter in the batter.

Crackling Corn Bread

This was the only item from my Maya Angelou Tribute meal that we didn't like. It was too dry for our tastes. I normally bake my corn bread at 500 F for 20 minutes. This recipe has you bake at 350 for one hour. I did only make 1/2 a recipe and took it out after about 50 minutes but if I made it again I'd bake at my temp and time to see if it were less dry.

German Potato Salad

We enjoy potato salad and often like German style instead of the mayo based I usually make. I decided to try this one as it was totally different from the version I normally make. Bad Idea! Neither hubby or son liked it at all. I could eat it but sure wasn't my favorite. It was too soupy for one thing from the beef consomme. It suggested serving it with spicy brown mustard and I stirred some in mine which helped the flavor a little.Son said it was too sweet but it only calls for 2 tablespoons of sugar in the 1/2 cup of cider vinegar and 1/4 cup of EVOO for the dressing. I definitely won't be making this one again.

I tried making a half recipe and was in a hurry. I forgot to add in the salt and baking powder until I already had them in the pan and the tops brushed with butter. I divided both ingredients among the muffins and stirred it in with a wooden skewer. They tasted a little flat. So my rating may be unfair. If I make again I'll update.

Pumpkin Spice Latte

Neither daughter nor I have even had a Pumpkin Spice latte and we both enjoy pumpkin things. We decided to remedy that today. Hubby bought me three pumpkins recently from a neighbor who grew them. I cooked up one today and pureed it and then froze most of it for adding to Ruby's homemade dog food. I used some for the recipe in the Recipe Girl's cookbook for the latte. Daughter and I both found out we don't care for Pumpkin Spice Lattes but we're still glad we tried them.
I hate to give this such a low rating since I'm sure there is nothing wrong with the recipe we just didn't like it.

I found out I don't care for dates in my eggs. But I can say I tried before I decided that. I've heard people say they didn't like so and so only to tell you they've never tried it. I always ask then how do you know you don't like it. I'm glad I tried it, now I know I don't like it. Instead of the flatbread I toasted some sourdough bread to go with since I had some on hand anyway. Also was out of cumin seeds so just used a dash of ground cumin.

My family and I love potato salad many ways but unfortunately we didn't care for this version. I did have to make a couple substitutions and maybe that affected the outcome to much. I couldn't find sherry vinegar and used red wine vinegar instead. I though I had canola oil and didn't so I used vegetable oil.

Garlicky sesame-cured broccoli salad

This one says you can leave at room temperature for at least an hour or up to 48 hours in refrigerator. I decided to make the day before I was planning on eating. I'm not sure why but I didn't care for the taste of the broccoli this way. I enjoy all the ingredients involved but somehow this didn't work for me taste wise in the finished dish. I kinda hate to give it a low score because it's not the recipe itself that doesn't work it's that I didn't enjoy the taste.
