The Cake Bible

This cake is everything the title says and more. The texture is light and soft with a tender crumb. It's good with many of the fillings and frostings that Rose has developed for her book. This recipe makes a two layer cake. There is a section for formulas and techniques for making large wedding and special occasion cakes. I use the formulas to turn this cake into a multi-layered creations for my family and friends special moments.

Almond Stollen

I looked at many recipes before I found this one. My family likes stollen with an almond paste filling, this one is excellent. I have made this recipe twice and it came out better than any store bought stollen. It takes quite a bit of time to make, but it yields three loaves that you can freeze or give away.

Almost No-Knead Bread

The recipe has been tweaked a bit, from the original no-knead recipe. The dough is not as wet as the original, needs some kneading and it replaces some of the water with a mild-flavored lager. It is an easy recipe that produces a great bread.

Apple Upside-down cake

I made this cake for my husband's birthday (October), he loved it. Easy to prepare,even though there are two steps. First you make the apple and walnut topping and then the batter. Bake the cake,let cool 1 to 2 minutes, invert onto plate and serve with or without the Bourbon Whipped Cream. Simple and delicious.

Blueberry Lattice Pie

This is a great recipe for blueberry pie. I make it every summer when the blueberries are in season, sometimes I add some blackberries when they look good in the farmers market. I use the recipe for the sweet dough on page 149. I always get raves.

Candied Clementine Tart

This is a simple and delicious tart. The clementines must be made ahead of time, but are easy to make. The filling goes together in a snap, pour into a partially baked tart shell, and float the candied clementines on top. The tart can be made without the clementines, but makes a beautiful presentation and adds to the delicate flavor.

Chocolate Decadence Minis

These little molten chocolate cakes are cute and delicious. Easy to make, but I had some trouble getting them out of the pan. The chocolate pieces that you put in the middle, stuck to the bottom of the pan. Next time I will try a nonstick pan.
This recipe makes 32 mini cakes, but they freeze beautifully. Reheat for a few seconds in the microwave.

Corn Fingers

Mix up the batter and put in the pan. Delicious! One problem is that you need a special pan but they are not that expensive and another is you need fresh cooked corn. I used cooked frozen corn and it was fine.

The recipe has many ingredients but is very easy to prepare. It is a rich cake with lots of dates and nuts and a good balance of spices. You can serve it with the cream cheese spread that is included in the recipe,but it is delicious without it.

Elephant Ears

This is a very simple dessert to prepare.There are only three ingredients, puff pastry, sugar and a pinch of salt. Combine the sugar and salt, roll puff pastry in the sugar till well coated. Fold the pastry according to the directions, cut and bake. Easy and delicious.
